        Please try to have these ingredients prior to class if possible. Don’t worry they are easy to find. Additionally, if you have any dietary restrictions don’t worry, please let us know in advance so we can accommodate you. Also, we are able to send you substitutions for some ingredients.

          Pisco Sour is one of the best Pisco cocktails.

      Ingredients:

      03 ounces of Pisco (If you do not have Pisco, you can use white rum or vodka), 01 egg white, 01 ounce of lime juice or 6 limes, 04 ice cubes, 01 ounce of simple syrup

        • Ceviche (On Modays)

          Ceviche is the national dish of Peru. You will learn to prepare the classic Ceviche served in many restaurants throughout our country, and the Nikkei style using fruit.

      Ingredients:

      Classic ceviche: 150 gr of fish (any very fresh. It may be Corvina, Halibut, Escolar, Hamachi, Mahi-Mahi), 08 limes, 01 red onion, fresh cilantro sprigs, 01 teaspoon grated garlic, 01 teaspoon grated ginger, salt to taste, 01 chilli habanero(optional)

      Nikkei Ceviche (vegetarian option): 01 mango or melon (300 gr), 01 spoon soy souce light, 01 spoon sesame oil, 01 spoon oyster souce, 01 sprig of green onion.

      We will accompany Ceviche with 01 sweet potato, 02 oranges juice, 03 spoon white suggar, a small piece of cinnamon, 01 fresh corn and lettuce leaves. Of course, you can accompany it with other options.

        • Lomo Saltado (On Tuesdays)

          It is a famous Peruvian dish and one of the favorite for tourists. It is made of sliced beef stir stir-fried with red onions, yellow Peruvian chilies (aji amarillo), tomatoes, soy sauce, vinegar and cilantro.

      Ingredients:

      200gr beef tenderloin or sirloin, 01 tablespoons soy sauce, 01 red onion, 01 yellow Peruvian chili pepper (optional, but highly recommended) if you can't get it you can use any other mild yellow, orange or red chili pepper, 01 tomatoes, 02 tablespoons red wine vinegar, 200gr potatoes deep-frying oil, 01 to 02 tablespoons soy sauce, 01 to 02 tablespoons oyster sauce, fresh chopped cilantro, 01 teaspoon dry oregano, salt, pepper and cumin to tast.

        • Aji de Gallina (On Wednesdays)

          A Peru's classic dish. It is a spicy creamed chicken. This dish is usually served with rice, boiled yellow potatoes, and black olives. You can buy frozen yellow aji peppers that often look more orange than yellow.

      Ingredients:

      01 yellow potatoes, 01 slices white bread, 3/4 cup evaporated milk, 1/2 pounds chicken breast, 01 cups chicken stock, 01 to 2 yellow aji peppers, ¼ cup vegetable oil, 01 red onion, 01 tablespoons walnuts (chopped), 01 tablespoons Parmesan cheese (grated), 01 hard-boiled eggs, 02 black olives (halved), salt, pepper to tast.

        • Quinotto (On Thursdays)

          It is a clever hybrid name (quinoa + risotto) of this rich and creamy dish. Quinoa is a high protein grain that has been harvested for centuries in the Andes. Nowadays Quinoa is very popular all over the world thanks to its really nutritional properties and interesting nutty taste.

      Ingredients:

      50 gr clean mushrooms, mixed cooked quinoa, 01 teaspoon yellow chili paste, finely chopped red onion (1⁄4 un.), 04 ounces crushed garlic, white wine, 25 gr unsalted butter in cubes, 02 ounces heavy cream, 50 gr shredded parmesan cheese, vegetable oil, salt, chicken stock.

        • Causa Peruana (On Fridays)

          Causa is a tasty dish prepared with basic yellow potatoes and lime. It can be prepared with chicken, tuna, seafood or other varieties of white meat. There are different variants for the filling though. This dish is accompanied qith mayonnaise, avocados, black olives, lettuce or vegetables.

      500 gr yelow potatoes, 350gr skinless, boneless chicken breasts, pinch salt, pinch freshly ground black pepper, 01 tablespoons mayonnaise, dDash olive oil, 01 to 02 teaspoon aji amarillo chili paste (or liquidized mild red chili), juice of 1 lime, 01 ripe hass avocados, halved, pitted, and peeled garnish, 01 ripe hass avocado, halved, pitted, peeled, and sliced, lettuce leaves or herbs.

        • Papa a la Huancaina (On Saturdays)

          It is a dish typically served as an appetizer. consisting of boiled yellow Peruvian potatoes covered in a spicy cheese sauce, all served with lettuce, black olives, and boiled egg.

      02 potatoes, rinsed and peeled (yellow Peruvian potatoes or Yukon Gold), 02 to 03 fresh Peruvian yellow peppers, 150 gr. Fresh cheese, 01 can of evaporated milk, 1/3 cup vegetable oil, salt, soda crackers, boiled eggs, black olives, and lettuce (to accompany)
